The Ritz-Carlton Oʻahu, Turtle Bay has unveiled an exciting new culinary initiative that bridges Hawaii’s vibrant island food scenes. The Town & Country Chef Series, developed in collaboration with Executive Chef Daniel Quintero, celebrates the dynamic contrast between urban Honolulu and Wailuku “town” influences and the rugged, soulful spirit of the North Shore’s “country” lifestyle – all while championing local chefs, farmers, and Hawaii’s broader culinary community.

The series kicks off on May 23, 2026, at the resort’s signature oceanfront restaurant, Alaia, with celebrated guest chef Sheldon Simeon. A six-time James Beard Award nominee, two-time Top Chef Fan Favorite, and author of the acclaimed Cook Real Hawaiʻi, Simeon will also mark the release of his latest book, Ohana Style, during this intimate evening.

Nestled along Oʻahu’s iconic North Shore, The Ritz-Carlton Oʻahu, Turtle Bay continues to redefine destination dining with restaurants that offer sweeping ocean vistas and menus deeply rooted in Hawaii’s ingredients and flavors. The Town & Country Chef Series builds on this foundation, bringing together acclaimed visiting chefs and the resort’s own culinary team for memorable multi-course experiences that highlight both heritage and innovation.

At Alaia, guests will savor the island’s abundant bounty in a stunning beachfront setting. For the premiere, Chef Simeon and Executive Chef Quintero have teamed up to craft a special six-course tasting menu. Each dish reflects Simeon’s signature “interpreted local” approach, exploring the evolution of modern Hawaiian cooking. Thoughtfully selected wines from Kosta Browne Winery will accompany the meal, chosen to complement the nuanced acidity, tropical sweetness, and bold umami profiles of the cuisine.

Beyond the plate, the series carries a meaningful mission. The Town & Country Chef Series has partnered with Chef Hui, a local nonprofit working to strengthen Hawaiʻi’s food system by connecting chefs, farmers, families, and food service providers.

In response to the impacts of recent Kona Low storms, each dinner will include a fundraiser with proceeds directed to Chef Hui. Funds will support North Shore farm relief efforts and community-led resources for affected farmers. Knife maker Seisuke Knife is also contributing a knife to the fundraising initiative.
