Mandarin Oriental, Hong Kong has officially unveiled Terrace Boulud by Mandarin Oriental, introducing a new rooftop French brasserie concept and marking the Hong Kong debut of acclaimed chef Daniel Boulud. The opening also signals the first milestone in the hotel’s extensive transformation programme.
Located on the 25th floor of Landmark Prince’s and directly connected to the hotel, the new venue extends Mandarin Oriental’s dining portfolio beyond its flagship premises for the first time. Set against sweeping views of Victoria Harbour and Central’s skyline, Terrace Boulud positions itself as a rooftop destination that blends French elegance with Hong Kong’s contemporary energy.
The restaurant was formally introduced on 12 March with a ribbon-cutting ceremony attended by invited guests, media and long-time patrons. The opening evening offered an early look at what the hotel describes as an “urban oasis,” combining Parisian-inspired design with the brand’s signature service standards, while hinting at broader changes to come as part of the property’s renovation journey.
Chef Daniel Boulud described the launch as a personal milestone. Having spent decades in New York welcoming guests from Hong Kong, the chef noted that opening in the city carries special meaning. He also reflected on first visiting Hong Kong in the 1980s, citing its vibrant culinary culture as a long-standing inspiration. Working alongside CEO Sébastien Silvestri and design studio Malherbe Paris, Boulud said the restaurant was conceived to honour his culinary heritage while embracing Hong Kong’s dynamic dining scene.

At the heart of Terrace Boulud is a menu structured around four of Boulud’s culinary inspirations: La Tradition (French classics), La Saison (seasonal specialities), Le Potager (vegetable-focused dishes) and Le Voyage (globally inspired flavours). The offering reinterprets the traditional French brasserie through a modern lens, incorporating regional ingredients and influences.
During its soft-opening phase, the restaurant is serving dinner alongside bar snacks and terrace drinks. Full lunch and dinner service is scheduled to begin in mid-April, with afternoon tea to follow at a later stage. Guests can expect an à la carte menu complemented by a curated wine list, cocktails and craft beverages. The terrace is designed to transition throughout the day from sunset aperitifs to late-night gatherings overlooking the city.
The interiors, designed by Malherbe Paris, draw inspiration from the golden age of French brasseries and the romance of luxury train travel. Curved wood detailing, layered lighting and handcrafted elements define the indoor dining space, while floor-to-ceiling windows open onto a rooftop terrace offering panoramic harbour views. Subtle references to local craftsmanship and Hong Kong’s waterfront setting anchor the design within its location.



According to Hubert de Malherbe, Founder and Creative Director of Malherbe Paris, the concept was envisioned as a “tropical brasserie”: a lively, convivial space where French sophistication meets the warmth and vibrancy of Hong Kong. The dual panorama of harbour and mountains, he noted, makes the setting particularly distinctive.
A New Chapter for Mandarin Oriental, Hong Kong
The launch of Terrace Boulud represents the first phase of Mandarin Oriental, Hong Kong’s broader renovation initiative, a programme valued at over USD100 million. The transformation will encompass guestrooms, suites, public areas, wellness facilities and dining concepts, while maintaining the heritage and identity of the historic property.
The full renovation is expected to be completed in the fourth quarter of the year. According to Group Chief Executive Laurent Kleitman, the project aims to honour the hotel’s six-decade legacy while introducing new experiences aligned with Hong Kong’s evolving landscape. The partnership with Chef Daniel Boulud, he added, reinforces the group’s culinary positioning and offers a preview of what guests can expect in the next chapter of the hotel’s evolution.
